Saved the leftover vinegar (about a half cup) for a Carolina BBQ sauce.

Nothing special, just a pork rub, a bit of Worchester sauce, vacuum bagged for the trip. Heat skillet on high, brown both sides with fresh garlic and onions, turn down to simmer and add beans. On this particular trip my nephew made smoked pork and beans, dumped that on top of the pork chops then and let it simmer. Normally use a can of Bush BBQ baked beans.
