what have you cooked recently?

tonight I made empanadas, they came out pretty tasty. I love cooking (its the one thing I think I am really good at.) I was in the cooking business for 5 years before joining the navy. I don't think you should have your hobby as a job. But if anyone ever has cooking questions I am sure I could be of help, I also have a binder of recipes I have learned, or made up along the way. If you don't believe me ask my mom, I have been cooking since I was about 12. :) I love cooking for people so if you ever want to hang out or cook out or work on rigs let me know. :)

My brother is getting me into grilling (this time it won't just be throwing a piece of meat over a fire). Hopefully I will have something to post here before long.

I learned that in any zucchini recipe, you can replace zucchini with artichoke, ounce for ounce, and it is friggin awesome!!

The way our garden is going I may need to try replacing artichokes with zucchini and summer squash! ;)
 
Got it - ground meat with the addition of some sort of spices... stuffed into a casing... sausage... a little more explanation is in order.
 
My mom always made 'poor man's crab cakes' with zucchini every summer. Basically shred the zucchini, pat dry, and use instead of crab meat. No one could tell until you told them.

That was chicken, cilantro, cotija cheese,habenero, and other spices. I had never made a sausage with chees in it, totally experimental.

Speaking of zuccihini..my Mom came up wih a sweet, dill zuccihini recipe that are the best pickles you would ever try.
 
Cotija is really fresh, more so than mozzarella, they were good but the cheese didn't melt how I wanted... if you're doing chicken its important to use dark meat due to the higher fat content.

What about mixing in some duck meat/fat.

My brother is a Chef and makes duck hams out of the breast. You slice it very thin and eat it like an expensive salami.

I have a charcuterie book and they do that, I haven't really experimented with duck much. When I was "chef-ing" I pretty much only made duck confit, I would like to smoke some duck though. I considered mixing pork fat into the sausage, the butcher is the one that clued me in on just using dark meat. Duck fat, like bacon grease, is gold in a kitchen. Don't believe me? put a spoonful of bacon grease in your beans, refried or baked. oohohohohohohoohhoh mmmmm
I will buy some duck breasteses and try smokin them
