I'll follow Herbie's post with the award winning Poppy Seed Chicken recipe.

This can be a great trail recipe too as the chicken and the soup/sour cream mix can both be prepared in advance at home, put in zip lock bags and refrigerated until you are ready to cook it. Dutch oven for about 30-40 minutes works just great.

POPPY SEED CHICKEN

6 large (or 8 medium) chicken breasts, cooked and cut into bite-size pieces (I prefer grilling the breasts seasoned to your liking for added flavor)
2 cans cream of chicken soup
1 cup sour cream
2-3 cloves of garlic, pressed or minced
1 teaspoon Champagne or Dijon mustard (optional)
54 Ritz crackers, crushed (1 tube = 36 crackers)
½ cup butter, melted
2 tablespoons poppy seeds

Spread chicken pieces in 9x12 glass baking pan (home) or a standard dutch oven (trail). Mix soup, sour cream, garlic, and mustard. Pour mixture over chicken pieces and spread out evenly. Sprinkle crushed Ritz crackers on top. Pour melted butter evenly over crackers; then sprinkle with poppy seeds. Heat in 350o F (dutch) oven for approximately 35 minutes until topping is crisped and sauce is beginning to bubble along sides of pan. Serve plain or over rice or egg noodles.

Enjoy!

As a first time entrant it was enlightening to watch the different methods and dishes

Watch, smell, taste! :eat So many different things to try is what's so fun!! Trying to limit each to one bite so everyone can enjoy is tough. Double recipe next year!!!

Thanks for sharing your 1st place winning recipe Brent! :drool

Always Dave.

It's been posted over on Outdoor adventure for a few years now. ;) Tom Severns (Badlands 4x4) won't let me come to BorregoFest without promising to do this dish.

Well I got 2 of the 3 right, someone who will remain un-named to protect the guilty, forgot to tell me the entrants get to taste the goods first. I was only advised when the pots were picked clean but then maybe they know me

The beginning of the cooking is a very hectic time. Its not easy relaying all of the nuances of how it's all going to work.

Many folks who had ovens in the fire ring, I never even saw. Thank god Stewart was taking care of the names of dishes and chefs.

Stuart and Cris did an outstanding job!

We also had many more ovens on the table than there were votes in this thread. Which I'm happy for, don't get me wrong. But it really does help out knowing in advance how much we need to plan for.

Better too many than too few! So many good dishes from the Dutch ovens, it was a fun dinner trying as many as I could. People were raving about the winning poppy seed chicken by the time the line got up to the tables but it was already gone, so I guess we'll have to try the recipe here at home sometime. Thanks for posting it, and thanks to all the fine cooks!

Thanks for the ultimate compliment on my Poppy Seed Chicken! Double recipe next year I guess!!
