Dutch Oven Corn Casserole

Well, this won second place at the DRV 2013 DO competition. I was instructed to post the recipe, so here it is. To give credit where credit is due, this was posted on the forum at camp-cook.com. Lots of great DO recipes there. The bacon and beans are my mods to the original.

Corn Casserole

12" Camp Oven

2 cans - Whole Corn (drained)
2 cans - Creamed Corn
2 small boxes - Jiffy Mix
2 cups - Sharp Cheddar (reserve 1/2 cup)
2 - Eggs
1/2 stick - Butter (melted)
Crumbled Bacon
1 can – Black Beans, (drained) (optional)

DIRECTIONS:

Mix all above ingredients in large bowl with exception of 1/2 cup cheddar and mix well. Pour into DO and bake 1hr @ 375... 8 bottom/18 top. About 5 minutes before being done add remaining cheese over top and melt.

I think the perfect Dutch Oven 3 course would be Tembo Tusk's Pork "ensemble", this awesome corn casserole, and MidnightRider's Pineapple Upside Down cake!

If I were on Death Row and about to go, that would be my last camp meal of choice!

Thanks Tim, Im going to have to try making this. We had some at DR and it was great, well done. Everyone knows you can't go wrong with bacon.
