Christmas Day dinner from the bottom up were the favorites requested by Paul, Dianne, and Kate... Carnitas with Salsa Fresca and Guacamole, Lobster Macaroni and Cheese with Black Truffle Oil, and Lamb Satay and Peanut Sauce. Full day of preparation and cooking is the best gift I can give. I in turn receive the best gift of family and praise for the efforts - clean plates!

Looks great, Tim! I LOVE Lobster Mac & Cheese!

We're all about non-traditional meals around here. For example, Thanksgiving was ribeye and lobster! :p

For Christmas dinner this year, I made a 2 1/2 pound meatloaf made with buffalo instead of beef. Apryl made mashed potatoes and green beans.

You're Hired. Man that looks good. No pics of our Christmas dinner as I was cooking and never had time to get behind the camera.

I did a standing rib roast, leg of lamb, and baked asparagus. My daughter brought brussel sprouts and her husband prepared bloody Marys. We ended up feeding 12 as most of the extended family were in attendance.

We need to join forces and incorporate Andy. My son took the picture with his phone to send to his GF who was at her parents, otherwise I might have staged the photo a little better.

I spent the day cooking... when I got up it was time to prepare the pork shoulder for braising, then when everyone was up, time to make breakfast... custom omelets: baby spinach with fresh garlic, feta, and asiago cheese, and salsa fresca, turkey sausage, and cheese. Then prepare the salsa and guacamole. Marinade for the lamb was next, and to trim up the lamb itself for marinating. Lobster mac was the easiest but I didn't even get around to the shaved Brussel sprouts sauteed with garlic and pancetta.

It was a long day but it was worth the satisfied belly's and praise. Now that we're all "adults" gifts really aren't all that important as is the time we get to spend with each other. Being able to skillfully prepare an unusual meal or someones favorite dish, I think, is a special gift that really benefits everyone. And demand... sort of like crack.

The family kept things simple this year. The Sunday before Christmas Elizabeth and James came up from Virginnie and along with our step-brothers we hung out at the old folks place. Sunday's dinner was buffet style with Beth's ham, potato and cauliflower crème soup, Mom's three bean soup and a big crock pot of pulled pork with coleslaw as a topper. Christmas day it was just Elizabeth's and my families at Mama's place. Beth brought up a tasty spiral-cut Ham, Mom made up a bunch of our homegrown potatoes and mashed them up and Michelle made pumpkin pies. Plus all the leftovers from Sunday. Simple but very satisfying and we had a great Christmas together.

We have a few different "traditional" meals that we have every year for the holidays, but with everyone's schedules it changes every year when we actually eat them. With the inlaws, it is shrimp, meatballs, various sides, coconut cake, and caramel cake. With all families together, it is a breakfast casserole with potatoes, sausage, scrapple, eggs, and cheese. With my side, it is lassagna, pepperoni bread, lemon meringue pie, and coconut cream pie. They are all wonderful meals with good food and great company. Unfortunately it also means I know need to go on a diet to fit in a kayak this spring!
