Don's BBQ Rubs & Seasoning Recipes

thought I would share these with the members here. Most of these took me a few years of tweaking to get the flavors just right. Sorry I can not share my BBQ Pork rub for the purpose of competitive reasons.

All Purpose Chicken Seasoning (great on anything bird)

1 1/2 teaspns Kosher Salt
1 teaspn Dried Basil
1 teaspn Crushed Dried Rosemary
1/2 teaspn Garlic Powder
1/2 teaspn Dry Mustard Powder
1/2 teaspn Paprika
1/2 teaspn Ground Course Black Pepper
1/2 teaspn Ground Dried Thyme
1/4 teaspn Celery Seed
1/4 teaspn Dried Parsley
1/8 teaspn Ground Cumin
1/8 teaspn Cayenne Pepper
1/8 teaspn chicken bouillon granules

Mix the salt, basil, rosemary, garlic powder, mustard, paprika, black pepper, thyme, celery seed, parsley, cumin, cayenne pepper, and chicken bouillon together until blended.


Cajun Spice Rub (great for blacken fish, chicken, wild game, pork, beef & vegetables)

1/4 cup Coarse Salt
1/4 cup Paprika
1 tlbspn Dried Thyme
1 tlbspn Dried Oregano
1 tblspn Coarse Pepper
1 tblspn Onion Powder
1 tblspn Garlic Flakes (or Granulated)
2 teaspn Cayenne Pepper
1 teaspn Ground Bay Leaf, cant find it ground it your self with spice grinder.
1-3oz.container of Zatarains Blackened Seasoning

Combine all ingredients as shown. Add more Cayenne Pepper for additional heat. Rub on your favorite meat and let stand for an hour for maximum flavor.


All purpose Rub (great for beef short ribs, beef brisket, Tri Tip or chicken)

1 tblspn Kosher Salt
1 teaspn White Pepper
1 tblspn Course Black Pepper ground
1 teaspn Onion Powder
2 teaspn Garlic powder
2 teaspn Dried Parsley

Combine all ingredients as shown



Recipe for Mexican Spice (great on all meats & vegetables)

1\4 cup Paprika
1 teaspn Cayenne Pepper
1 tblspn Salt
2 teaspn Ground White Pepper
1 tblspn Ground Black Pepper
2 tblspn Granulated Garlic
1 tblspn Chile Powder
1 tblspn Ancho Chile Powder
2 tblspns Dried Oregano
1 1\4 teaspn Dried Chipotle Powder

Combine all ingredient together, mix well.

1/4 cup finely ground coffee (I like dark roast coffee)
2 tblspns Dark Brown Sugar

1 tblspn Salt (Kosher)
1 tblspn Course Black Pepper
1 tblspn Ground Coriander
1 tblspn dried Mexican Oregano
2 teaspns Ground Ginger

Combine ingredients in a medium bowl.

This has my attention.
 
last night I done some flat iron cowboy T Bones with that rub. Killer flavor too. If you like a earthy robust flavor that is the one.

How am I just seeing this??
 
Looks like some great recipes! I use the same spices, at a little bit of different ratios and depending on what I have around. A trick I learned, sounds crazy but it is good, for smoked meats rub the meat with yellow mustard before applying the rub. Helps keep the meat moist and holds on the seasoning.
